How does strikethrough text work?
A special Unicode combining line is attached to each character. The characters stay editable as text, but a line is drawn through them wherever they're displayed.
Why is there a gap in the line sometimes?
Spaces don't receive combining marks, so the line naturally breaks at spaces. That's expected behaviour for combining-character effects.
